Lemon Braised White Beans and Broccoli

This Lemon Garlic Broccoli and Braised Beans is always on my meal planning list. It's the perfect side dish to compliment any main that everyone will love!

Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 1 lemon sliced into wheels
  • 4-5 cloves garlic minced
  • 2-3 heads broccoli cut into even-sized florets
  • 1 (15-ounce) can white beans (I like cannellini) drained and rinsed
  • 1/2 cup water
  • Sea salt and freshly ground black pepper to taste

Instructions
 

  • In a large Dutch oven over medium-low heat add the olive oil.
  • Once the oil is shimmering, add the lemon slices and garlic and cook for 2 to 3 minutes until infused and aromatic.
  • Add the broccoli and sauté until lightly golden, another 2 to 3 minutes. Season with salt and pepper.
  • Add the beans and stir to combine. If desired, allow the beans to sauté as well for a bit of a crispy exterior.
  • Deglaze the pan with water, scraping any browned bits of flavor off the bottom of the pot. Bring to a simmer and partially cover with a lid.
  • Allow to simmer for 10 to 15 minutes until the broccoli is al dente and not mushy and beans are warmed through. Check for seasoning then serve immediately.
