Carrot Cake Smoothie

IMG_8282I’m not kidding when I tell you my hands are orange, and nope I don’t spray tan. I eat a ton of vegetables that contain beta-carotene, giving my skin a tint of orange! Beta-carotene is not only found in orange vegetables, here are the top ten list of foods containing beta-carotene: sweet potatoes, carrots, leafy greens, romaine lettuce, butternut squash, cantaloupe melon, red peppers, dried apricots, peas and broccoli. So YES, basically my whole diet consists of beta-carotene and my hands and feet are pretty good signs of that.IMG_8270

Every other week or so I would go get a manicure and pedicure- but needless to say, it wouldn’t last long between running and baking :(. I noticed that every week the manicurist would scrub my hands and feet really hard. I thought it was normal protocol, but then realized she was trying to scrub something off my hands. She thought I had an uneven spray tan and was trying to clean up my hands and feet! They always get a good laugh when I tell them it’s from eating a lot of vegetables. 

Did you know some people eat beta-carotene to help them with their exercise induced asthma. Meaning more lung capacity to run faster and stronger!

IMG_8271So I turned one of my favorite cakes into a healthy and nourishing smoothie, packed with beta-carotene, protein and a ton of other goodness! I love the vibrant color of this smoothie and it’s smooth, creamy and thick texture. I used Bai5 Coconut flavor (no secret that I love coconut) to give the smoothie that coconut flavor found in carrot cake, and also blended in organic raisins I recently bought from Thrive Market.

So whats your favorite go-to smoothie?  

Recipe

  • 1 cup carrots (two medium carrots)
  • 1 cup molokai coconut bai5
  • 2 teaspoons organic raisins
  • 1 teaspoon almond butter
  • 1 scoop of vegan protein powder I used– Vanilla Vega Performance Protein 
  • 1/8 teaspoon cinnamon
  • dash of nutmeg
  • 1 1/2 cups of ice

garnish: organic raisins and organic coconut flakes

Blend all ingredients besides ice until smooth, once blended add your ice and blend until smooth and creamy.IMG_8262

    Love this! I made it for the second day in a row this morning but today I added a banana and used the Chai Vega Performance Protein instead of the vanilla…deeeeeelish! Thanks 🙂

    Me too its such a great way to start the day, thanks so much for sharing! I’ve done something similar with zucchini, vega chail (or vanilla) protein, cinnamon, nutmeg, and cocoa nibs for a zucchini bread smoothie and its great!

    This was great! I didn’t have raisins so I used a date instead and frozen carrots so I didn’t need the ice and it was amazing. Thanks for sharing 🙂
