Cheeze-Its Gluten Free and Vegan

IMG_8245I recently purchased some stuff from Thrive Market. It’s a really cool site that offers a lot of health foods at a discounted rate. Whenever I’m working with clients, their two main concerns are that they don’t have the time to food shop or it can be too expensive. In the past, I have looked into joining my local Food Coop where they offer health food products at a discount price. But joining would mean I would have to work there once a month and so would everyone in my family. I barely have time to go to the health food store myself, let alone work there! I was excited to work with the chickpea flour and nutritional yeast! So I decided I would make a cracker. Then I thought about crackers that I used to love and the first thing that came to mind when I thought of a cheesy cracker was Cheeze-Its. One year they came out with a tabasco flavor that had an addicting cheesy, spicy and salty flavor. It wasn’t as hard as I thought to create this recipe, it could have been an epic fail but ended up being kind of amazing. I hope you enjoy them as much as I did!IMG_8225Recipe: Preheat oven to 350
  • 2 cups garbanzo bean flour
  • 1/2 cup nutritional yeast
  • 1/8 teaspoon baking powder
  • 2 tablespoons hot sauce (optional for extra heat)
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 2 teaspoons coconut oil (melted)
  • 1/2 cup cold water 
  1. In a medium size mixing bowl add all ingredients besides coconut oil and water, mix well, then add coconut oil and water.
  2. mix until a dough formsIMG_8186
  3. line a baking sheet with parchment paper, spray with non-stick spray (I used the coconut oil spray I just bought)
  4. flatten your dough on the baking sheet, hands work best. Make sure its rolled out evenly.IMG_8188
  5. Cut them using either a knife or pizza cutter into 1×1 inch squares, poke a whole or dash the center with an X. (note I cut the ends to make them look even)IMG_8202
  6. sprinkle with a little sea salt
  7. Bake at 350 for 15-18 minutes until edges are brownIMG_8210
  8. let cool for 30 minutes and break them up.IMG_8224

    These look amazing! Am making them now but have run into a problem: it’s not making a dough. It’s very crumble-y. Is there more moisture than the 1/2 cup H2o and coconut oil? I thought I better ask before proceeding. Many Thanks!

      it should look like the dough in the picture with the directions. Either keep mixing with your hands or add 1-2 tablespoons of cold water! let me know how it turns out

    Can it be made with another type of flour? Like coconut, regular whole wheat, almond meal etc?

      whole wheat flour I am pretty sure will work not sure about the others!
