Double Your Serving Guacamole

Funny to think I used to hate avocado… Boy was I missing out one. Now I can’t stop at one serving. Whenever I have that issue I always look to vegetables to bulk up a dish. It’s not only adds nutritional value but also adds tons of volume to a dish. SCORE. Peas were a no brainer for this one, it’s subtle in flavor and enhances the color of the guacamole.

  • 1 cup of frozen peas completely thawed
  • 2 ripe avocado diced
  • 1/4  red onion diced very fine
  • 1/2 cup cherry tomatos diced and seeded
  • 2 cloves crushed garlic
  • 3 tablespoons fresh lemon
  • 1/4 cup chopped cilantro
  • Salt to taste

In a small bowl mash peas really well, in a medium size bowl combine avocado,onion tomatoes,garlic, lemon juice and mix together. Add your mashed peas and mix again. Be sure not to over mix so that you have some chunks. Garnish with chopped cilantro
