Sweet Potato Pie Protein Smoothie

IMG_2802It has been sooooo hot lately in New Jersey – we have been having a massive heat wave. Thankfully after my runs and workouts I can look forward to an ice cold refreshing smoothie. But I have to say, I kind of miss the holidays and all the warm flavors that season offers.IMG_2797I love when you can find “cinnamon spice” everything! These nostalgic feelings inspired me to make a smoothie that’s inspired by the holidays but is also cool and refreshing so in can be enjoyed all summer long.IMG_2794I had left over sweet potato from last night’s dinner. I used Asian sweet potatoes because they have a slightly nutty flavor. They look like sweet potatoes on the outside but are white inside. Sweet potatoes are a staple for me because they are loaded with fiber and complex carbohydrates, which help load up AND replenish my glycogen supply.IMG_2806This smoothie can really be perfect either as a pre-workout or post-workout drink. You can be sure you will never bonk during a workout with this one! In combination with Vega Vanilla Performance Protein, a little nut butter and Bai5 Pear to compliment the sweet potato, this smoothie can act as a complete meal or a recovery snack.IMG_2774I love the idea of a cold and refreshing drink that is warm in flavor. (The Asian sweet potato even offers a chestnut texture – another homage to the holidays!)  I can totally imagine this with pumpkin as well. Feel free to add a handful of greens into the smoothie to amp up the nutrients. I am in love with this smoothie. It feels like a dessert for breakfast.

Ps. My race went so well yesterday I had so much fun! I felt strong the whole way through! I will be writing a race recap! I will be sure to include with how I fueled. IMG_2810Recipe:

  • 1 1/2 cup Bai5 pear
  • 1/2 cup cooked sweet potato or 1/2 large sweet potato cooked (pumpkin works as well)
  • 1-1/2 scoop Vega Vanilla Performance Protein
  • 2 teaspoons nut butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla 
  • 4-6 ice cubes 
  • Optional add ins: hand full of greens, 1 teaspoon of flaxseeds, 1 teaspoon chia seeds and 1 teaspoon of maca powder

In a high speed blender blend everything till smooth and creamy. Sprinkle nuts and oats to garnish.

Note: if not using Bai5 nut milk works as wellIMG_2809

    YUMMY! I have yet to try sweet potato in a smoothie, but always think about doing it! 😉 I love all the flavors that are going on in this one…Thanks for sharing!

    Asian sweet potatoes are my favorite!! Such a great post workout refueling option!
