Chickpea “Tuna” Salad

I am always searching for something to add to my salads or sandwiches, to spice things up! I’v had many versions of this salad, but I made my very own that I love! filled with tons of bright flavors and bursting with flavor!

What you will need:

1 can organic Chickpeas

1 cucumber

1 tomato

3 celery stalks

3 radish

2 carrots

Dressing:

handful basil and parsley chopped finely

1/4 cup lemon juice

3 tablespoons apple cider vinegar

3 tablespoons of mustard

2 teaspoons onion, and garlic powder

Directions: in a mini chop, chop each vegetable separately and put aside in a bowl. then add chickpeas to the processor chop, leaving some texture. combine in a bowl set aside. for the dressing whisk all ingredients together, dress the salad and serve!
