Monkey Bread

After  many trials I have come up with the most perfect nutritious satisfying “monkey bread”. I was sleeping by my sister for the weekend and she had bananas that looked like they were on there way out, they were basically staring me down “make something!”. I wanted to make something simple enough that my niece and nephew can help me make, and hopefully get them to eat! I knew by adding peanut butter they would enjoy it, little did I know me and my sister would totally devour it by the end of the weekend. Be warned this bread is moist and addicting (even better the next day)! it can work with any nut butter your heart desires, feel free to add carob chips on top! Also can be done in muffins- portion control!!

Recipe:

2 1/2 cups of old fashion oatmeal

1/2 cup of Chia seeds or ground flaxseeds

2 teaspoons of baking powder

dash of cinnamon

1/2 cup of peanut butter (natural no sugar or oils)

3 ripe bananans

1/2 cup apple sauce

1 cup of almond milk

1 tablespoon of vanilla extract

Directions: grind oats in a food processor till a flour (oat flour can work but unsure about the measurements) add the rest of the dry ingredients, and grind. Add the wet ingredients into the food processor making sure the banana is mashed fully! for presentation top with ground oats and peanuts.

Bake in loaf pan 350 for 35 minutes keep checking it

Oh then I woke up in the morning to these little guys helping themselves! How cute!

    That’s gorgeous!! What an aunt! And something to do with extra bananas! Guess I should try that muffins version lol! Portion control!!
