Coconut Cake

TGIF!! I love coconut everything. Coconut cake is nothing I ever even heard of but I thought I’d give it a try. I used Bai5 Coconut drink which really transformed the cake, giving it that extra coconut flavor! If you are not a coconut fan this bread can be done with whatever Bai5 flavor you like! I bet it would be great with the Blueberry flavor and fresh berries! YUM! My family and I devoured this cake, no one could believe it was date sweetened and vegan! I sliced up fresh strawberries and layered the cake with it then cut it up and stored it in the freezer so I could enjoy it all week long.

Recipe: pre heat oven 350

  • 3 cups of old fashion oatmeal
  • 2 cups of shredded coconut divided 
  • 1/4 cup of ground flaxseeds 
  • 2 teaspoons of baking power
  • 2 teaspoons of cinnamon
  • 1 bottle of bai5 coconut
  • 2 cups of dates (soak them in hot water to soften)
  • 1/4 cup coconut oil

Grind dry ingredients- oatmeal, 1 cup of coconut, flaxseeds, baking powder and cinnamon till finely ground for around 2-3 minutes. Add in wet ingredients- Bai5, dates, coconut oil and combine till smooth. Fold in 1 additional cup of shredded coconut. Divide batter into 2, 8 inch baking pans and top with shredded coconut and crushed almonds. Optional glaze is to just melt almond butter. If baking into two layers, bake around 15-20 minutes at 350, until tooth pick comes out clean. Once cooled I layered it with fresh strawberries.
