Coffee Date Bites

These Coffee Bites have always been a go-to hit whenever I bring bike snacks on a ride. They were actually one of the first recipes I have ever shared on my IG way back when. I partnered with Enve to share this recipe with you guys! If you aren’t familiar with Enve they make some of the best wheels and bike components that are all made in the US!

These coffee bites are the perfect bite of energy pre-run or mid-ride. Whenever you choose to snack on these you cant go wrong…well maybe don’t eat them before bed. I like to make a bunch a keep them in my freezer this way I always have homemade bike snacks ready to go!
 Coffee Date Bites

Yields 15 Truffles

  • ¼ cup Whole Roasted Coffee Beans
  • 1 cup Raw Walnuts plus 1 Cup Crushed Walnuts
  • 1 tablespoon Pure Vanilla Extract
  • 2 teaspoons of Cinnamon
  • 2 pinches of Sea Salt
  • 2 Cups of Dates pitted (soaked in hot water for ten minutes)

 

Add coffee beans to a food processor pulse for 20-30 seconds. Add 1 cup  walnuts, vanilla, cinnamon, sea salt, pulse again for 30 seconds. While machine is running add dates one by one until a dough forms and everything combines. Fold in additional cup of crushed walnuts. Using a small ice cream scooper or tablespoon roll into balls and freeze!

    Yes, I’m curious about “¼ Whole Roasted Coffee Beans” means too. Does it mean 1/4 cup of whole Coffee bean?
