Easy Weeknight Crunchy Quinoa Stir Fry

Raise your hand if you like a quick weeknight dinner that translates to great leftovers? Doesn’t everyone?! This quinoa stir fry is the answer! Its super easy to whip up – less than 30 minutes, start to finish and it is packed with flavor and nutrients. One of my favorite things about this recipe is all the different textures from the crunchy broccoli and cashews to the soft and fluffy quinoa.

Quinoa is one of my favorite seeds to add into my diet because it has 8 grams of protein – nearly as much as an egg and 6 grams of fiber per cup. It is super filling while also giving you the essential proteins you need making it a complete meal when you bulk it up with vegetables.

This dish is so simple and will keep you energized without weighing you down. It is great over a salad for lunch or as a side dish for dinner. Either way the simplicity and amazing flavor will be sure to keep you coming back to this recipe! I have been tasting and testing this recipe all week and i just can’t get enough of it.

Recipe

  • 4 cups cooked quinoa
  • 2 cups broccoli florets
  • 1 cup chopped carrots
  • 1/2 cup toasted cashews
  • 1/4 cup chopped scallions
  • 2 tablespoons brags amino acid/ soy sauce alternative
  • 1 teaspoon crushed garlic

Sauce

  • 2 tablespoons brags amino acid/ soy sauce alternative
  • 2 tablespoons fresh lemon or lime juice
  • 2 tablespoons water
  • 1 tablespoon almond butter
  • 1/2 tablespoon sriracha
  • 1/2 cup chopped scallions

Directions:

  1. Prepare a medium/large frying pan with non-stick spray over medium heat. Place chopped carrots and garlic sauté for about 10 minutes. Then add in quinoa, broccoli and brags amino acid. Cook for an additional 5-10 minutes. Now add the sauce and cook for another 2-3 minutes tossing everything together.
  2. Top with toasted cashews and scallions

Sauce:

  1. In a medium size bowl whisk together all the ingredients until smooth
