No Bake Banana Bread Truffles

I teamed up with Now Foods to bring you this next recipe. These no-bake banana bread truffles have no added sugar or gluten and are so easy to make. I love making them and storing them in the freezer so I can grab an easy afternoon snack or pre-workout bite. They are light enough to fill you up without sitting heavy in your stomach. This recipe is the perfect way to use those overripe bananas that are staring at you from your countertop.


I love creating different flavored truffles. These can be so versatile and, for someone who hates the texture of bananas, this is a great way to reap the benefits of bananas without actually eating one. The truffles are soft with bits of crunch, thanks to the walnuts. And the oats, along with all the spices, give it that banana bread feel an taste. Roll them in coconut or chopped nuts and, bam! You have a healthy homemade snack. I used Now Foods products to create this recipe. I personally love their vanilla extract and all their organic nuts not only because they taste great, but also because their prices allow you to eat organic without breaking the bank.

I worked on this recipe video with my friend Ben to show you just how easy it is to create these little balls of goodness.

Recipe:

Dry ingredients:

  • 2 cups oats divided
  • 1 1/2 cup walnuts 
  • 1 teaspoon cinnamon

Wet ingredients:

  • 2 bananas
  • 2 cups dates
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract

Combine 1 1/2 cup oats, 1 cup walnuts and cinnamon  in a food processor. Process until crumbly or a flour like consistency. Then add wet ingredients till well combined. Once well combined add remaining 1/2 cup oats and 1/2 cup walnuts Roll into balls. Roll in coconut or chopped nuts. Store in the freezer. Yields 22 truffles.
