Zucchini Bread Overnight Protein Oatmeal

IMG_0864Overnight oats are a great breakfast option on a warm summer morning. I love how easy they are to prepare the night before – one less thing to think about in the morning. Especially for those sneaking in a quick workout before heading to work and barely even have time to shower. There is no excuse to skip breakfast when it’s sitting in the fridge waiting for you that morning.  I love adding vegetables to my oats because it doubles the serving size and offers tons more nutrients.IMG_0749
IMG_0755No, I am not crazy! Shredded zucchini in oats actually tastes amazing. Zucchini doesn’t have much flavor and it absorbs whatever flavor that its mixed with. It also has a similar texture to oats. Instead of hiding the fact that I added zucchini I embraced it by calling this Zucchini Bread Over Night Proats. (That stands for Protein Oatmeal – a cool new word I just learned!)IMG_0849
Since breakfast is usually after a workout I like to include a little bit of everything – some complex carbohydrates to replace the glycogen lost during a workout, protein to repair and rebuild muscle and of course, healthy fats. And that’s exactly what I tried to do here in this recipe!IMG_0851I used Nuzest protein powder, which tastes amazing. It is free of soy, gluten, dairy, gmos, artificial flavors etc…it is the real deal! The protein source is pea protein – one of my favorite plant based protein sources. Plus it has 95 calories per serving with 21 grams of protein! Score! It’s the perfect protein to add to your overnight oats to give it that extra burst of protein you are looking for.  Recipe:
  • 1/2 cup old fashion oats (I used Purely Elizabeth ancient grain oats)
  • 3/4 cup shredded zucchini
  • 1 tablespoon Nuzest Vanilla Protein Powder
  • dash cinnamon 
  • 1 1/2 cup almond milk (or any non dairy milk)
  • 1 tablespoon crushed walnuts
  • 1 tablespoon raisins
  1. In a mason jar combine oats, zucchini, protein powder and cinnamon. Mix well.
  2. Add almond milk, stir again and store in the refrigerator over night or for 4 or more hours.

    I have unflavored hemp protein. How can I adapt this recipe using it instead of buying new products?

    i do the same and I love it!! i use a bit more protein, and add cinnamon and ginger 🙂 zucchini oats are my favv!!

    hi Lotti,
    Just wanted you to know this recipe inspired my new favorite breakfast. 3/4 cup grated zucchini, 2 Tbls chia seeds, 2 Tbls oats, 1 tsp maca and 1 cup almond milk. I soak this overnight then top with bananas, coconut and drizzle with coconut butter! You must try!

    does this recipe make 1 serving? or is this for 2 people? do you know the nutritional information for 1 serving? I made this last night and love it! but it makes much more than the little serving in the mason jar you picture in the article.
